Avocado Toast is one of my favorite simple foods to make. I was recently given Black Truffles from Romania and wanted to try adding them for a little PiZAZZ :)
Avocado Toast with Black Truffle Butter
- Pumpernickel Bread
- 1 Avocado
- Pecorino Romano Cheese
- 1 Black Truffle
- 1 Stick Butter
- Coconut Oil or Olive Oil for frying
- Red Plum
- Cracked Black Pepper, Salt
Grate the Black Truffle into a bowl and mix softened butter and a pinch of salt until incorporated. Cover and leave in the refrigerator while preparing the rest!
Coat the bottom of a non-stick pan with Coconut Oil and toast the bread over medium high heat. While the first side is browning, slice the Avocado in half, toss the pit, and using a sharp knife carefully cut a grid on the two surfaces of the Avocado meat. Flip the bread and let the other side toast. Also thinly slice the Red Plum.
When both sides of the black bread are nice and crunchy, place on a plate and scoop out half an Avocado onto each piece of bread mashing it down with a fork. Generously add the Truffle Butter, grate the Pecorino Romano cheese, crack the Black Pepper and top with a couple slices of Red Plum. Enjoy!
