Chocolate Banana Bread

Chocolate Banana Bread


  • 3 Ripe Bananas
  • 1/4 Cup Coconut Oil (Melted)
  • 1/3 Cup Maple Syrup
  • 2 Flax Eggs (Mix 1/4 Cup warm water and 2 Teaspoons Flax Meal, in 5 minutes it will be gel)
  • 2 Tablespoons Almond Butter (I used Once Again Nut Butter)
  • 1 Teaspoon Vanilla Extract
  • 1 Teaspoon Apple Cider Vinegar
  • 1 Cup Gluten-Free Flour (I used Trader Joe's)
  • 1/2 Cup Certified Gluten-Free Oats (I used Bob's Red Mill)
  • 1 Teaspoon Cinnamon
  • A dash of Salt
  • 1 Teaspoon Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1/2 Cup Mini Vegan Chocolate Chips (I used Enjoy Life)


Preheat oven to 350.

Mash the bananas with the next 6 wet ingredients until all the large chunks of banana are manageable small lumps.

In a separate bowl, mix together the dry ingredients, which are the next 6 ingredients on the list.

Add the dry mix to the wet mix, stir until well incorporated, and then stir in the mini chocolate chips.

Transfer the batter to a loaf tin-- either greased or lined with parchment paper-- and bake for 45-50 minutes or until a knife comes out of the center clean. If you want to sprinkle more mini chocolate chips on top or experiment with banana slice petals, go for it! Just keep the toppings light as you want the bread to rise in the oven.

Let cool COMPLETELY! This will ensure that the loaf stays a loaf :) Then cut and enjoy!
