Why not jazz up a traditional chocolate chip cookie with some Coconut?
Chocolate Chip Coconut Cookies
- 1 Cup Flour
- 1/2 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1/2 Cup White Sugar
- 1 teaspoon Vanilla Extract
- 1/3 Cup Vegetable Oil
- 1 teaspoon Apple Cider Vinegar
- 1/4 Cup Coconut Milk
- A dash of Salt
- 1/2 Cup Mini Chocolate Chips
- Coconut Flakes to roll dough around in
Preheat oven to 350.
Combine first three dry ingredients in a medium bowl. In a separate smaller bowl, combine all other ingredients except Chocolate Chips and Coconut Flakes. Stir all wet ingredients until fully combined. Slowly pour all wet ingredients into your dry bowl. Do not over stir, but make sure all the lumps are gone. Feel free to roll back your sleeves and get your hands in there too! If the dough seems too dry, add a little bit of water. Then, incorporate Chocolate Chips.
Take a plate and cover it with Coconut Flakes. With your hands, roll small chunks of dough until a little ball is formed. Next, roll the ball around on the Coconut Flake plate until the balls are fully covered.
Place on greased or parchment lined cookie sheet and bake for 10-11 minutes.
Let cookies cool slightly before transferring them onto a serving plate.
These cookies can be made Gluten Free by substituting the Flour with a Gluten Free Flour mix, such as King Arthur.
The Baking Soda and Apple Cider Vinegar act as an Egg replacement, making these cookies totally Vegan.
For a more traditional cookie, use regular milk instead of Coconut Milk and melted Butter instead of Vegetable Oil.
