Fresh Fruit and Chia Seed Pudding

I don’t eat enough fruit. Well, unless it’s in a smoothie ;) This Chia Seed Pudding gives me a great excuse to pack in fruits from all colors of the rainbow while also absorbing lots of essential nutrients. Chia Seeds are a perfect way for vegetarians and vegans to get Omega 3s in their diet, which is imperative for your heart and brain. They also aid as an anti-inflammatory making them great for those who suffer joint pain or asthma. Did you know that “Chia” is the ancient Mayan word for “strength”? These South American native seeds hold a protein punch! And to think I was just trying to make something yummy to put fruit on! This pudding is delicious with or without fun toppings, incredibly simple to make, and just straight up cool lookin’. Enjoy!

Fresh Fruit and Chia Seed Pudding

Prep Time: 20 minutes

Yield: 4 bowls

Fresh Fruit and Chia Seed Pudding


  • 2 Cups Coconut Milk (or Almond, Soy, any milk alternative)
  • 1/2 Cup Chia Seeds
  • 1 Tablespoon Vanilla Extract
  • Optional sweetener, like Agave, to your desired taste
  • Mixed Fruit: Kiwi, Strawberry, Plum, Peach, Blackberry (those are what I choose!)
  • Mixed Toppings: Macadamia Nuts, Pistachios, Desiccated Coconut Flakes, Cocao Nibs


Mix the coconut milk, vanilla, sweetener and chia seeds in a bowl. Cover, and refrigerate overnight.

Cut, slice, and chop all the fruit you want. Divide the chia seed pudding into bowls and top with fruit and nuts!
