I have recently gone completely vegan. After the initial great feeling of making this decision, I got flooded with fear– “WHAT ABOUT THE SWEETS??? WHAT ABOUT TREATS AND DESSERTS AND COOKIES AND AND AND…?!?!” When I thought I had it tough, I turned to my friend who told me she had just gone completely Gluten-Free. Now THAT’S scary! To calm both of us down, my awesome Mom whipped up these Gluten-Free AND Vegan cookies. Now all is well :)
GFV Peanut Butter Chocolate Chips Cookies
- 2 Cups Gluten-Free Flour (all-purpose from Trader Joes)
- 1 teaspoon Baking Soda
- 2 teaspoons Baking Powder
- 1/2 teaspoon Salt
- 1/2 Cup Coconut Oil (softened)
- 1/2 Cup Peanut Butter
- 2 Tablespoons Vanilla
- 3/4 Cup Brown Sugar
- 1/2 Cup Organic Sugar
- 1/2 Cup Water
- 1 Cup Certified Vegan Chocolate Chips
Preheat over to 350.
In a small bowl, combine the dry ingredients--the first 4 on the list. In a larger bowl, cream all the rest of the ingredients except for the chocolate chips.
When the wet ingredients are well mixed, start slowly incorporating the dry ingredients until the dough is smooth. Then fold in the chocolate chips.
Wah-la! Line a baking sheet with parchment paper to reduce the clean-up. Spoon the dough onto the baking sheets and lightly press down on each ball to flatten out.
Bake for 12-15 minutes, remove from the hot baking sheet and let cool off on a cooling rack.
I dare you to eat just one ;)
