Goji Energy Snack

Goji berries are a super food. They contain 18 essential amino acids, and arguably more beta carotene than any other food on planet earth – and that includes carrots. This berry also packs in more protein than any other fruit! So it’s no wonder it’s the stand-out ingredient in these energy snacks! Goji berries, along with almond butter and sunflower seeds, provide the protein needed to get you going! This snack is naturally sweetened with Medjool dates and crunches with coconut and carob :)

Goji Energy Snack


  • 6 Medjool Dates
  • 2 Heaping Tablespoons of Almond Butter
  • 1/2 Cup Unsweetened Coconut Flakes (plus more for topping)
  • 1/3 Cup Raw Cashews
  • 1/4 Cup Unsalted Sunflower Seeds
  • 1/4 Cup Dried Goji Berries
  • 1/4 Cup Carob Chips
  • 2 teaspoons Ground Flax
  • 1 teaspoon Chia Seeds
  • 1 teaspoon Coconut Oil
  • 1 teaspoon Vanilla
  • 1/4 teaspoon Himalayan Salt


Pit and chop the Medjool dates and add them to a food processor with all of the other ingredients except Sunflower Seeds, Goji Berries and Carob Chips. Blend until mostly smooth. If it's a little crunchy that's okay!

Transfer the mixture to a bowl and add the Sunflower Seeds, Goji Berries and Carob chips. Mix with your hands.

When it's all incorporated, roll the mixture into little balls. Then rolls the balls in a dish with some more Unsweetened Coconut Flakes. Lastly, place on a plate with parchment paper.

Cover the plate with cling wrap and freeze for an hour. These energy snacks will be ready to enjoy! Refrigerate any remaining...if there IS any remaining ;)
