Guiltless Pancakes


You know when you leave IHOP feeling like “IBarelymove”? Pancakes are fun in theory, but tend to leave me feeling heavy and tired. I couldn’t believe when these Gluten-Free AND Vegan pancakes turned out as well as they did! I never need to feel heavy and tired in the morning again ;)

Total Time: 25 minutes

Yield: makes 12 pancakes

Guiltless Pancakes

Ingredients

  • 3 Cups Gluten-Free Oats
  • 2 Ripe Bananas
  • 1 Cup Soymilk (or nutmilk of choice)
  • 1/2 Cup Water
  • 1 teaspoon Chia Seeds
  • 1 teaspoon Ground Flax
  • Dash of Salt and Cinnamon
  • Coconut Oil or Earth Balance for the pan
  • Maple Syrup
  • Optional Earth Balance and Blueberries for serving

Instructions

First, in a small bowl mix together 1/8 Cup of hot water, Chia Seeds and Flax to make a fake egg. Let that sit while you make the rest of the batter.

In a bowl, mash the bananas until smooth. Then mix in the Oats, Soymilk, Water, Salt and Cinnamon until the entire mixture is uniform. When the fake egg is gelatinous, mix that in as well. It will not be as liquid-y as other pancake batter! You will be able to spoon it into the pan :)

Heat a teaspoon of Coconut Oil over medium heat in a large non-stick skillet. Spoon in 4 pancakes for each round. Flip when each side is a crispy, golden brown on each side. Add a teaspoon of Coconut Oil before each batch!

Keep pancakes warm until you are ready to serve! Serve with Earth Balance, Maple Syrup and Blueberries, or Coconut Yogurt and Walnuts, or Almond Butter and Carob chips, or.... :)
