Lemon and Dill Asparagus

This side dish uses fresh, simple ingredients. Asparagus is nutrient rich with A, B, and K vitamins and calcium, magnesium, and potassium minerals. An adoration for asparagus started waaaaaaay back when Roman Emperor Augustus created an “Asparagus Fleet” to haul the vegetable back to his home. Fast forward thousands of years, I’ve hauled this bunch of asparagus from the farmer’s market fleet to sauté in a cast iron skillet and added a squeeze of lemon, pinch of dill, and garnish of radish for a full-body of flavor. Enjoy!

Lemon and Dill Asparagus

  • Fresh Asparagus
  • 1/2 Lemon
  • 2 Radishes
  • Dill
  • Olive Oil
  • Salt and Pepper

Rinse and cut the ends off of your bunch of asparagus.

Coat the bottom of a cast iron skillet with olive oil and turn on medium heat. Add the asparagus and sauté until the colors get bright.

Meanwhile, with a food processor or hand grater, grate the radishes.

Turn off the heat on the asparagus and squeeze half a lemon on there, sprinkle with salt and pepper, and garnish with the freshly grated radish.
