Love Yourself Truffles

In light of what’s happening in the world and in my life, I have forgotten to love myself. I cannot control the outcome of the presidency, nor can I control the outcome of any relationship, friendship, or my future. All I can control right now is my faith in God and remembering to love myself. That way, once I feel nurtured and spiritually centered, I will be able to be of service to everyone around me, truly love all of you, and feel more connected to our country, our Earth, our brothers and sisters. Making a healthy treat that satisfies my sweet-tooth AND gives me energy (without sugar, gluten, or dairy) is my first step towards loving myself and spreading the love. My “Love Yourself” Truffles are sweetened naturally with dates, bound by protein rich almond butter, have a hint of cardamom and cinnamon and are generously dusted with raw cocao powder. Enjoy!

Love Yourself Truffles

Total Time: 15 minutes

Yield: 15 balls

Love Yourself Truffles

  • 11 Dates, chopped
  • 1/2 Cup Walnuts
  • 4 Tablespoons Almond Flour
  • 3 Tablespoons Almond Butter (I used heaping tablespoons of almond butter from roasted almonds)
  • 2 Tablespoons Cocao Nibs
  • 1/4 teaspoon Vanilla Powder (or alcohol-free vanilla extract)
  • a couple dashes of ground Cinnamon, Cardamom, Salt
  • at least 1/2 Cup of Cocao Powder for dusting

Mix everything together in a bowl with your hands until you have one big ball. If your mixture is too dry or not staying together, you can add more almond butter. If it's too wet, add more almond flour.

Have a bowl of cocao powder ready for dusting. Pull small chunks from the big ball to roll into smaller balls and toss 'em in the cocao powder bowl making sure they are evenly coated.

Eat immediately ;) OR you can totally refrigerate in an air-tight container.
