Mom’s Vegan Madeleines


I love simple, especially when it comes to baking! Every time a new recipe comes out of the oven and it’s actually GOOD I’m still amazed. I should have known better with these cookies, they are my mom’s recipe! And moms always know best ;) These cookies are soft, pillowy, chewy, and just sweet enough without giving you a cavity! No one will know they are vegan, and I’m sure no one will miss the extra calories from butter and eggs! :)

Mom's Vegan Madeleines

Prep Time: 30 minutes

Yield: 25 cookies

Mom's Vegan Madeleines

Ingredients

  • 2 Cups Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 Cup softened Coconut Oil
  • 1 Cup Sugar
  • 1/2 Cup Coconut Milk (room temperature)
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon salt
  • Powdered Sugar

Instructions

Preheat oven to 350.

Combine flour, baking powder, baking soda and salt. Next, stir in coconut oil, sugar, coconut milk, and vanilla extract. It's important that all of the ingredients are room temperature or the coconut oil with harden!

Once everything is mixed together, measure little dollops of batter onto a lined baking sheet and bake for 10-12 minutes. When the cookies are still hot and fresh out of the oven, top with powdered sugar for an extra sweet kick :)
