Morning Quesadilla and Avocado Rose

Ingredients

  • Corn Tortillas
  • Vegan Cheese (I used Field Roast Chao Tomato and Cayenne slices)
  • Raspberry Jam
  • Vegan Butter (Earth Balance)
  • Avocado
  • Salt and Pepper

Instructions

Lay a couple slices of cheese on the bottom tortilla and spread raspberry jam on the top tortilla half and sandwich together.

Melt a little Earth Balance at the bottom of a skillet on medium heat, add quesadillas and cover.

When they are crispy at the bottom, flip and re-cover. Covering the skillet makes the cheese meltier :)

Meanwhile, make the avocado rose by peeling half an avocado, cutting in thin slices horizontally, spreading out into a long line and then curling in the end until a larger spiral appears.

Cut and serve hot!
