Peanut Butter, Chocolate, Saltine Bars

Peanut Butter, Chocolate, Saltine Bars

Ingredients

  • 1/2 Cup Vegan Butter, Melted (Earth Balance)
  • 1 Cup Powdered Sugar
  • 1 Sleeve Crushed Saltines (about 2 cups)
  • 1 1/4 Cup Peanut Butter (plus 2 Tablespoons for topping)
  • 1 1/4 Cup Vegan Dark Chocolate Chips (Guittard)

Instructions

Line an 8x8 baking pan with parchment paper and set aside.

Melt the butter and crush the Saltines in a ziplock baggie. Mix the powdered sugar with the melted butter and almost all of the crushed Saltines (leave a handful for the topping!) in a bowl.

Fold in the peanut butter and mix well.

Lay the mixture out into the prepared baking sheet.

In a non-stick skillet, melt the chocolate chips with remaining 2 Tablespoons of peanut butter until smooth. Then pour over the top of the peanut butter mixture and sprinkle the rest of the Saltines across the top.

Cover and refrigerate for a couple of hours. Leave out for 10 minutes, then cut into squares.
