Mix all ingredients together in a large bowl with your hands. Once everything is incorporated, gauge whether more coconut oil or almond butter is needed by trying to roll the truffle mixture into a ball with your hand. If it falls apart, add a little more of either one until the mixture can hold its form.
Next, in three small bowls prepare coconut, cocao powder and pecan pieces separately for coating. Alternate rolling the truffles into the toppings until you have finished.
Refrigerate for at least an hour so the protein truffles can set.
