Roasted Carrots
Ingredients
- 6-8 Carrots of Many Colors
- Olive Oil
- Salt, Pepper
- Roasted Cashews and Cilantro for topping
Instructions
Preheat the oven to 400.
Coat whole carrots in olive oil and sprinkle with salt and pepper.
Bake for 35 minutes. When they are finished, top with roasted cashews and chopped fresh cilantro.
