Preheat your oven to 400.
Rinse then roughly peel the sweet potatoes. Cut them into cubes.
In a large bowl, combine sweet potatoes, olive oil, salt and pepper. Toss to coat completely. Then, add the almond flour and lightly toss again being careful not to over-saturate the almond meal-- just make sure the almond meal is evenly coating the sweet potatoes.
Transfer the sweet potatoes to a line baking tray with space between each cube-- this allows all sides to get crispy!
Bake for 35 minutes, take out and serve hot!
