This Gluten-Free recipe makes the richest, tallest, tastiest Cornbread you’ll ever meet. Sound like a dream date? Don’t be shy to go for seconds, it’s healthy! You can add a little bit of Cayenne if you like things spicy or a pinch of Cinnamon if you have a sweet tooth :)
Sky-High Sweet Potato Cornbread
- 1 Package Gluten-Free Cornbread Mix
- 1 1/2 Cups Buttermilk
- 1 Medium Sweet Potato
- 1/3 Cup Oil or Melted Butter
Preheat oven as instructed on the Cornbread Mix box.
Peel and cut the Sweet Potato. Steam until very soft.
In a bowl, combine the Cornbread Mix, Buttermilk and melted Butter. Stir until just incorporated then gradually mix in the Sweet Potato. Be careful not to over work the batter, chunks of Sweet Potato is okay!
Scoop the batter into a greased Cast-Iron skillet or a greased 9x9 Square Pan.
Bake for 25-27 minutes or as instructed on Cornbread Mix box.
When the Cornbread is ready, smear a little bit of butter on top and serve warm!
