- 1 Cup Coconut Cream
- 1 Cup Sliced Organic Strawberries
- 1/2 teaspoon Vanilla Extract
- 1 Stevia Packet
- Topping options: strawberries, rainbow cereal, sprinkles
Refrigerate a can of coconut milk overnight. In the morning, scoop out the solid coconut cream and discard the clear liquid that separated from the cream.
In a food processor, add all ingredients and blintz for 10 seconds. Scrape down the sides with a rubber spatula if needed and blintz again.
Transfer to a bowl and decorate with your toppings of choice :)
I used stevia so that the integrity of the color was maintained. You could also use regular white sugar. I would advise against dark sweeteners like maple syrup and coconut sugar.
