Strawberry Sprinkle Cake

The first time I made this cake was to celebrate the birthday of a very lovely woman. As I presented it to her filled with candles, I could see that the thoughtful decorations of fresh strawberries and sprinkles really touched her. Go the extra step and make your cake not only delicious, but beautiful! It will always be appreciated! :)

Strawberry Sprinkle Cake

Yield: 12-15 Cake Slices

Strawberry Sprinkle Cake


  • 1 1/2 Cups Flour
  • 1 3/4 tsp Baking Soda
  • 3/4 Cup White Sugar
  • 1/2 Cup Coconut Milk
  • 1/2 Cup melted Butter
  • 1 Tablespoon Apple Cider Vinegar
  • 2 tsp Vanilla Extract
  • 1 Package Cream Cheese
  • 1/2 Cup room temperature Butter
  • 2 Cups Powdered sugar
  • 6 Fresh Strawberries
  • Sprinkles


Preheat oven to 350.

In a small bowl combine Flour and Baking Soda. With an electric beater in a large bowl, mix the Sugar, Coconut Milk, melted Butter, Apple Cider Vinegar and Vanilla Extract until smooth. Gradually add the dry ingredients and mix until there are no lumps. Be careful not to over beat! This could cause your cake to sink instead of rise.

Pour your batter into a greased 13x9 pan and leave undisturbed in the middle rack of your oven for 25-30 minutes.

After you have taken the cake out to cool, make the icing. Using electric beaters, mix the room temperature Butter, Cream Cheese and Powdered Sugar until smooth. Slice the Strawberries and have the Sprinkles on hand.

When the cake is completely cooled, carefully transfer to a flat surface to ice. Evenly coat all sides of the cake with the icing and decoratively top with the sliced Strawberries and Sprinkles.
