Super Bowl Cupcakes


  • 1/2 Cup melted Coconut Oil
  • 1 Cup Organic Sugar
  • 1/2 Cup Coconut Milk Yogurt
  • 1/2 Cup Unsweetened Coconut Milk
  • 1 teaspoon Apple Cider Vinegar (mix with coconut milk and let sit for a minute)
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • 2 Cups Flour
  • 1 Cup vegan mini Chocolate Chips
  • Icing: 1 Cup Cocoa Powder
  • 1 1/4 Sticks softened Vegan Butter
  • 1/2 Cup Unsweetened Coconut Milk
  • 1 teaspoon Vanilla


Preheat your oven to 350.

Melt the coconut oil and cream together with the next 7 ingredients. Mix in flour and chocolate chips until JUST incorporated, careful not to over mix!

Spoon the batter into a mini-muffin tray. This recipe makes about 40 so be sure you have enough liners!

Bake for 15-17 minutes. While that's going, mix all the icing ingredients together with electric beaters. The beaters really make the icing fluffy, it's really nice. Refrigerate the icing until the cupcakes are out of the oven and have cooled off.

Spread the icing and decorate each cupcake according to your favorite team!
