Tofu Sandwich

Tofu Sandwich


  • 1 Package Extra Firm Tofu (cut into 4 slabs)
  • 1 Cup Almond Meal for "breading"
  • Salt, pepper, coriander
  • Olive Oil
  • Bragg's Amino Acids
  • 8 Slices Sprouted Grain Bread (I used Ezekiel)
  • Veganaise, Whole Grain Mustard
  • 2 mashed Avocados
  • 2 Sliced Tomatoes
  • Fresh Spinach


Let's get the tofu going!

Coat each side of the tofu slabs in almond meal. Heat up a skillet with olive oil, salt, pepper and coriander on medium/high heat. Place each breaded slab of tofu in there and let them brown on each side.

Meanwhile, put all the bread in the toaster. When it comes out, spread veganaise on one half, mustard on the other half.

When the tofu is brown and crispy, squeeze some Bragg's amino acids over the tops and remove from heat. Place each slab on a sandwich. Spread mashed avocado on top of the tofu and layer with tomato and spinach.

Cut that sloppy sandwich in half and enjoy!
