Rice pudding is the ultimate cozy-up-to-the-fire food, but afterwards leaves me feeling like the ultimate I-can-barely-move girl. My version is vegan, made with coconut milk and slightly sweet so you feel lighter after enjoying it! Top with Cocao Nibs, the amazing superfood, and you’ve got yourself the ultimate healthy comfort food! Add walnuts and raisins for them morning, or simply enjoy it plain :)
Vegan Rice Pudding with Cocao Nibs
- 4 Cups Cooked Rice
- 4 Cups Coconut Milk (I used Unsweetened)
- 1/2 Cup Sugar
- 1 Tablespoon Vanilla
- 1/4 Tablespoon Cinnamon
- 1/4 Tablespoon Cardamon
- Cocao Nibs
Stir coconut milk, sugar, and spices into the cooked rice over medium heat.
Continue stirring, making sure not to let the bottom burn, for about 15 minutes. The milk will start to reduce and get thicker and more fragrant. When the milk starts to boil, turn off the heat, mix in the Vanilla, and let the rice pudding sit covered for 20 minutes before serving. It will thicken up!
Serve warm with Cocao Nibs and a sprinkle of Cinnamon Sugar.
