Apple Cinnamon Rolls

Ingredients

  • 2 Cups Flour
  • 1 Tablespoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 4 Tablespoons Earth Balance, plus 3 Tablespoons for filling and topping
  • 3/4 Cup Unsweetened Coconut Milk
  • 1 Tablespoon Lemon Juice
  • 2 Apples, grated (equals about a cup)
  • 1/2 Cup Coconut Sugar
  • 1 Tablespoon ground Cinnamon
  • (Optional glaze: 1 1/2 Cups powdered sugar and a tiny bit of plant-based milk)

Instructions

Preheat oven to 375.

Combine dry ingredients into a bowl. Add the (COLD) Earth Balance and swiftly mix with your hands so as not to warm up the butter! Next start to pour in the lemon juice and coconut milk. You may not need the full amount of coconut milk, just keep stirring in until the dough is sticky!

Turn the sticky dough onto a floured surface and dust the top. Then fold in half and pat down. Dust the top with flour, fold in half and pat down. Do this about 6 times. Pat into a long rectangle and flatten out with your hands.

Melt an additional 2 Tablespoons of Earth Balance and mix it together with the grated apples, cinnamon and coconut sugar. Spread the mixture out evenly over the dough rectangle leaving room around the edges. Then roll the whole thing jelly-roll style.

Cut even rolls and place together on a parchment paper lined 8x8. The cinnamon rolls should be touching, that way they rise instead of spread apart.

Lastly, melt the very last Tablespoon of Earth Balance and paint over the tops of the cinnamon rolls.

Bake for 30 minutes.

If you're making the glaze, add about a Tablespoon of plant-based milk to the 1 1/2 Cups of powdered sugar. Keep stirring adding tiny bits of milk slowly until you reach a glaze consistency. Then delicately glaze those Apple Cinnamon suckers and ENJOY!
