Blueberry Muffins
Ingredients
- 1/2 Cup melted Coconut Oil
- 1 Cup Coconut Sugar
- 1/2 Cup Coconut Milk Yogurt
- 1/4 Cup Unsweetened Coconut Milk
- 1 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1/4 teaspoon Salt
- 1 teaspoon each of Vanilla and Almond Extracts
- 2 Cups Flour
- 1 Cup fresh Blueberries
Instructions
Preheat the oven to 350.
Melt the coconut oil and cream together the next 7 ingredients. Add in the flour being careful not to over mix. Once the flour is moistened and there are no lumps, fold in the blueberries until just incorporated.
Spoon batter into line muffin tray and bake for 30 minutes
