This recipe is WHOLE30 compliant! I love dipping stuff– sweet potato fries, regular fries, tempeh buffalo wings, chips, cucumbers, celery stalks, you name it! My mom and I made this Cast-Iron Cauliflower with Dill and Avocado Mash together and we very pleased with the outcome! The cauliflowerettes were crispy, savory and warming and the mash was creamy, cooling and refreshing. Perfect balance. This is guarateed to be a hit at a party, around the dinner table, or by yourself watching Netflix in bed– basically anywhere you’d wanna dip ;)
Ingredients
- 1 Head of Cauliflower
- Olive Oil
- Spices including Coriander, Asafoetida, Salt, Pepper
- 1 Avocado
- Fresh Dill
Instructions
Cut the head of cauliflower into wedges.
Heat olive oil and spices in a large cast-iron skillet on medium heat. Place all the lil califlowerettes in there making sure none are on top of the others. This ensures maximum crispiness :)
Once one side is browned, flip.
Meanwhile, mash and avocado into a bowl with salt, pepper, and chopped fresh dill.
When the cast-iron cauliflowers are crisp to your liking, shake some salt n pepper on them and serve hot with the dill avocado mash!
