Crispy Potatoes with Sriracha Butter

Crispy Potatoes with Sriracha Butter

Ingredients

  • 6 small Organic Gold Potatoes
  • Olive Oil
  • Salt, Pepper
  • Fresh Rosemary
  • 3 Tablespoons Vegan Butter (I used Earth Balance)
  • 2 Tablespoons Sriracha

Instructions

Preheat the oven to 400 and line a baking try with parchment paper

Thinly (and carefully!) slice each potato almost to the bottom. Place all the potatoes on the lined baking tray.

Drizzle Olive Oil over the tops, then sprinkle salt and pepper and place a sprig of rosemary on each.

Bake for 45 minutes. While the potatoes are getting crispppaaaayyyy, combine the Earth Balance and Sriracha and mix together.

When the potatoes are fresh outta the over, spoon the sriracha butter over the top and enjoy!
