A bright, refreshing chilled soup that is perfect for the summertime. Gazpacho is a classic Spanish dish with a tomato base and blended vegetables.

Yield: 6 servings



  • 5 tomatoes
  • 1 cucumber
  • 1 head of celery
  • 1 bell pepper
  • 1/2 purple onion
  • 4 scallions
  • 1 cup chopped cilantro
  • 1 tablespoon minced garlic
  • 1/4 cup balsamic vinegar
  • 1 tablespoon hot sauce
  • salt and pepper to taste
  • 2 Avocados


Roughly chop all ingredients. Reserve about a quarter of each vegetable to finely chop and set aside to add in later.

Place everything except the avocados in a high-powdered blender, like a Ninja. Blintz until smooth.

Mix in with the finely chopped cucumber, celery, bell pepper, scallions and avocados.

You can refrigerate this chilled soup to let all the flavors really mesh, or serve immediately with croutons!
