I lived with a girl from LA for a couple of years in Brooklyn. A few things really stood out about her to me: 1. She ran the New York Marathon. 2. Her photography skills matched her impressive level of determination to work for herself. 3. I only ever saw her eat Green Tomatillo Salsa that she would make from scratch in my blender once a week. Boy, if she only knew how often I went into our refrigerator to sneak bites of it! This summer, I couldn’t wait to try my hand at making this salsa verde myself! It’s light, full of cilantro, lime, and jalapeno. The tomatillos are high in dietary fiber making them great for digestive health. It’s the perfect addition to any summer get together or late night snack :)
Ingredients
- 6-7 Green Tomatillos
- 1/4 Cup chopped White Onion
- 1 Clove Garlic
- 1 Jalapeno
- 5-6 Sprigs Cilantro
- Juice from 1/2 a Lime
- 1/2 teaspoon Salt
- Water
Instructions
Roughly chop the tomatillo (after ditching the husks of course!), onion, cilantro, garlic and jalapeno. Keep in mind that the more seeds you leave in, the hotter it will be!
Place in a food processor or blender with lime juice, 1/4 cup water, and salt.
Blend until all ingredients are smooth!
