Low-Fat Peanut Butter and Cocao Rice Krispies Treats

Ingredients

  • 3 Cups Vegan Marshmallows (I used Dandies)
  • 2 Cup Organic Puffed Rice
  • 1/2 Cup Earth Balance (I used Soy-Free)
  • 1 Cup Organic Powdered Peanut Butter (I used Tru-Nut)
  • 1/2 Cup Roasted Cocao Nibs

Instructions

Have a parchment paper lined tray ready!

Melt the earth balance first in a non-stick skillet, then add the marshmallows. Once they start melting, add the puffed rice, powdered peanut butter and cocao nibs. Turn off heat and fully incorporate the ingredients by continuously mixing, flipping, and using your arm muscles to mash everything together.

Place the big krispie on the parchment paper, press down and form into a square. Refrigerate for at least 30 minutes, cut and enjoy!
