Ingredients
- 1 1/4 Cup Flour
- 1/2 Cup Oats
- 2 teaspoons Baking Powder
- 1 teaspoon Cinnamon
- Salt
- 1/2 Banana
- 1 1/4 Cup Coconut Milk
- 1 Tablespoon Apple Cider Vinegar
- 1 Tablespoon Oil
- 1 Tablespoon Vanilla
- 2 Apples
- 2 teaspoons Cinnamon
- 1/2 Cup Brown Sugar
- 2 Tablespoons Earth Balance (vegan butter)
- additional flour for thickening
Instructions
In a large bowl, combine first 5 ingredients. These are your DRY ingredients.
In a medium bowl, mash the banana half and mix in the coconut milk, apple cider vinegar, oil and vanilla. These are your WET ingredients.
Whisk the dry ingredients into the wet ingredients making sure there are no lumps.
Warm up a skillet or griddle and melt a little coconut oil or Earth Balance. Spoon in the batter and cook the pancakes until crispy on both sides.
While the pancakes are cooking, chop both apples.
In a skillet, melt the Earth Balance and stir in the Cinnamon and Brown Sugar until it melts. Add the apples. While the apples are cooking, mix about an 1/8 cup of Flour into water making sure it's smooth, no lumps. This will thicken our Apple Compote.
Add the flour mixture when the apples have softened from cooking. Stir constantly until the liquid becomes like a syrup. Remove from heat and serve with the Oatmeal Pancakes.
