Oatmeal Pancakes


  • 1 1/4 Cup Flour
  • 1/2 Cup Oats
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Cardamom
  • Salt
  • 1 1/4 Cup Coconut Milk
  • 1 Flax Egg
  • 1 Tablespoon Oil
  • 1 Tablespoon Vanilla
  • Earth Balance vegan butter, Walnuts and Maple Syrup for topping


In a large bowl, combine first 6 ingredients. These are your DRY ingredients.

To make your flax egg, combine 1 Tablespoon ground flaxmeal and 2 1/2 Tablespoons warm water. Let it rest to thicken and become the same gelatinous consistency as 1 egg.

In a medium bowl, mix the coconut milk, oil, vanilla and flax egg. These are your WET ingredients. whisk the wet ingredients into the dry ingredients.

Warm up a skillet and melt a little coconut oil or Earth Balance. Spoon in the batter and cook the pancakes until crispy on both sides.

I topped mine with Earth Balance, walnuts and maple syrup.
