Peanut Butter Chocolate Chunk Cookies

Peanut Butter Chocolate Chunk Cookies


  • 1/2 Cup Coconut Oil
  • 1/2 Cup Peanut Butter (salted)
  • 2 Tablespoons Vanilla Extract
  • 1 teaspoon Baking Soda
  • 2 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 3/4 Cup Brown Sugar (packed)
  • 1/2 Cup Organic Sugar
  • 1/4 Cup Water (plus more on hand)
  • 2 Cups Organic Unbleached Flour
  • 1 Cup Chocolate Chunks (vegan)


Preheat the oven to 350 and line two baking sheets with parchment paper.

Melt the coconut oil and mix in the next 8 ingredients making sure there are no lumps.

Next add the flour and mix just to incorporate the flour. If the cookie dough is looking too dry, add a little bit more water.

Last, fold in the chocolate chunks. Then place balls of dough on the lined baking sheets and press each dough ball with your fingers to flatten out slightly.

Bake for 11-14 minutes, allow to cool COMPLETELY before transferring them to a serving plate.
