Ingredients
- 1 1/2 Cups thinly sliced Butternut Squash
- 1 Cup Vegetable Broth
- 1 Avocado
- Olive Oil
- 1/3 Cup finely chopped White Onion
- 2 Cloves Garlic (chopped)
- 1 Tablespoon Hot Sauce
- the juice of 1/2 a Lime
- Chili Powder, Ground Cinnamon, Red Pepper Flakes, Salt and Black Pepper to taste
- 2 teaspoons chopped Cilantro
Instructions
Bring vegetable broth to a boil in medium sauce pan and add thinly sliced Butternut Squash. Reduce heat to low and simmer for 3-4 minutes or until Squash is soft.
Remove from heat transfer into a blender with the Avocado. Blend until smooth.
In the same medium sauce pan, heat up Olive Oil and add Onions and Garlic. When they become fragrant, add spices and let them roast for about a minute.
Pour the blended Butternut Squash and Avocado mixture into the saucepan with spices and reduce heat to low. Add Hot Sauce and Lime Juice while continuing to stir for another couple minutes.
Take off heat and add Chopped Cilantro. Serve hot with a fun lil garnish!

On a cold winters night, this soup will warm you right up! Easy to double or triple if you are cooking for a large family.
