Tofu Breakfast Sandwich
Ingredients
- Slab of tofu
- turmeric, salt, pepper
- olive oil for frying
- Vegan Cheddar Cheese
- Avocado
- Spinach
- Sriracha
- Vegenaise
Instructions
Fry the tofu in olive oil mixed with a dash of turmeric, salt and pepper.
Next, mash up an avocado with salt and pepper and set aside. In another bowl, mix together equal parts sriracha and vegenaise. Spread on two pieces of sourdough bread and and lay vegan cheese and raw spinach on on half.
When the tofu is crispy on both sides, lay that on top of the spinach and put back into your skillet with a little bit more olive oil. With the heat on medium, put the cover on so the cheese gets melty.
When the bread is crispy to your liking, remove from the pan, add the avocado mash and EAT!
