Vegan Betty Crocker Chocolate Chip Cookies
Ingredients
- 1 Cup Earth Balance (vegan butter)
- 3/4 Cup Brown Sugar
- 3/4 Cup Organic Sugar
- 1 Ener-G "egg" (or other egg replacer)
- 1 Tablespoon Vanilla
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 1/4 Cup Flour
- 1 Cup Chocolate Chips
- Optional: chopped nuts
Instructions
Preheat the over to 375
Line two baking sheets with parchment paper
In a stainless steel mixing bowl, melt the Earth Balance over a low heat on the stove. Mix in the next 6 ingredients. When fully smooth and creamy, start adding in the flour and mix until there are no lumps. Lastly, mix in the chocolate chips and nuts.
Using a cookie scoop, scoop dough onto prepared baking sheets leaving an inch and a half of space between each dough ball. Lightly press each ball down.
Bake for 9-12 minutes. I took mine out at 10.
Let cool for 10 minutes before transferring to a serving plate.
